A fermentation clamp ensures that all vegetables and fruit in your fermentation remains submerged without you having to worry about it.
The fermentation clamp is a perfect alternative to fermentation weights; it is much cheaper and no more pieces float up along the weights, because the clamp clamps firmly against the wall of your pot.
All (pieces of) vegetables and fruit that protrude above the surface pose a risk of unwanted microbes such as fungi and, for example, kahm yeast. With the help of this fermentation clapm, all pieces remain under the fermentation liquid and you no longer have to worry about mold or kahmyeast.
The Fermentation Clamp ensures that no vegetables float to the top between the lid and the brine. Besides that it ensures you maintain the right amount of oxygen between the moisture surface and the lid. This amount of oxygen is necessary for the pressure build-up that occurs during the fermentation process. If the pot is too full, it will overflow if there is not enough empty space in the pot.
The fermentation clamps are food grade and made of BPA free plastic. They are easy to clean and can be put in the dishwasher. Of course, you don't throw them away after fermentation and simply use them again in your next fermentation project.

This clamp fits almost all round bracket pots of half a liter, 1 liter, 1.5 and 1.8 liters that are available in the Netherlands. These usually have an opening with a diameter of around 8.5 cm.
