Slow roasted celeriac with fermented garlic

Dedicated followers know I'm a fan of vegan bbq's.


No, I'm not talking about store bought meat replacers here. It's the veggies itself who play the main character.


We roasted a whole celeriac with both fermented and fresh garlic. This bulbous root becomes sweet on the barbie but keeps the earthy taste with buttery and gratifying tones from the garlic and a little acidic tone brings it all in to a savory and welcoming balance.


This roast is definetly not reserved for vegans only as everybody seems to love this whole heartedly dish on bbq parties.


Don't forget to serve this roasted tuber with your favourit fermented condiment. Miso veganaise and smoked sriracha are our treasured combination here.
